Green Coffee Is on the Way

Today was a big step for us at Fat Puppy Coffee Roasters.  We made our first green coffee order. This is the point where the proverbial rubber meets the road.

For months we have been planning and working for the day when we fire up the coffee roaster for that first batch of fresh roasted coffee, intended for retail.  Even though it required a considerable amount of money and effort to get this far, failure before now, although tough, would be recoverable.  But now, it’s personal.

You see, roasting coffee is a mixture of science and art.  With proper tools, a roaster can adjust the flame, air, and time in a controlled manner.  During the roasting process, carbon dioxide and water are released from the beans while reactions occur between the complex sugars and amino acids. These reactions result in hundreds of aroma and flavor compounds which form the coffees fragrance, acidity, mouthfeel, and flavor.  The artful component is where the person engaged in roasting coffee can impart their own personality into the roast.  Small adjustments in time and temperature have a great effect on that coffee’s aroma, liveliness, body, and taste.  Our passion and personality will help guide our vision of where we want to take each coffee. What is more personal than that?

In a few days, that big truck with the rubber tires will be coming on down the road, delivering that first order of green coffee here in Myerstown, Pa.  I’ll get to work roasting, and maybe, hopefully, you will like our personality.
